Turns out I was wrong above.
I *didn't* finish the quests, but I *could* have.
When I couldn't figure out how to get them to talk to me I just started over (I didn't really like my Ranger anyways). While messing around with my new Rouge I figured the above out.
Last night it happened again, a henchman wouldn't rejoin my party, and I had removed him by talking to him... so that ruled out my above statement.
What it turns out to be is: When you first ask a henchman to join you, they give you something (a gem, a piece of paper, a feather...). If you remove them from your party, the only way they will rejoin you is if you have this item in your inventory. --I had put them in my stash to free up inventory space.
So that's why they wouldn't talk to me. So I could have finished the quests with my Ranger, if i had know what was wrong. But I'm much happier with my Rouge, so it all worked out.
