I can't tell you if there are any quests you've missed unless you tell me which quests you've done.
Sharwyn is an adequate companion earlier on due to her versatility and arcane spellcasting ability, but I'd be looking at getting a pure spellcaster if I were you - someone like Linu who can also fight melee very adequately is good, and her spells at the upper level are pretty awesome, and she will make every battle with undead a lot easier. Boddyknock is another alternative but once enemies get too close to him it's all over.
BTW, her clothes changing when you level up means that she leveled up too and got better armor.
