Because except for the + to hit, you're getting nothing. Some of them are immune to every other bonus of a racial enemy. So while the + to is nice, and at times there are a lot of undead, you only get 5 selections.
My fav's are (in no particular order):
Vermin - This game has a lot of vermin. But I like it for PnP, too, because Rangers are outdoor characters and vermin are common in wilderness. And can be quite an appropriate choice in "underdark" encounters with drow.
Abberations (mimics, mindflayers, nagas, otyughs, beholders, driders, etc.) are excellent when you're doing "underdark" adventures in large cavern complexes. Also, many of them can be found in urban encounters (beholder cults, mindflayer cults, evil temple guardians).
Dragons (dragons, wyverns, dragon turtles (aquatic based adventures), etc.) are found all the time as they are meta-predators.
Giants (ogres, trolls, giants, ettins, ogre mages) are very common in this campaign and form the backbone, or at least a leg or two, of any persistent campaign.
Humans (lots of "boss" types) are the dominent race. A good choice.
Magical Beasts (phase spiders, basilisks, summoned fiends/celestials, etc.) is a very good choice when you're fighting mages. But is also a good choice because there are a lot of powerful creatures.
The rest of them are either too marginal, or too specialized for most of the game. I even hesitated with Dragons on the above list.
