If you're not a wizard or sorceror, you don't need any quartz stones, fen berries, skeleton knuckles, fire beetle bellies, slaad's tongues, bodak teeth, etc. These are used only in the magic shop item creation labs. You may want to hold on to a few, because Eltoora charges a reagent in order to see her goods for sale in chapter 2. However, if you're not a wizard or mage, she won't have anything you'll want.
The other items are used to forge magic weapons and armor. It's handy to keep two or more of each item. Find a magic bag and stuff it full of reagents. When it gets full, just sell the rest. The rarest items are adamantite and diamonds. Keep any of those you find. The other items you'll find at least 2-4 per chapter, so don't worry about them too much.
