You can spawn the creature and kill it again.

You must be completely alone. I would dismiss your henchman, and go inside the prison to do this.

Once inside the prison bring up the console by hitting

` (Tilde key without pressing shift)

then at > type

DebugMode 1

You should see "success"

Now at the console type

dm_spawncreature M1Q2_DEVOUR

This will summon a devourer and make it a part of your group. You will only be able to kill it by using

> dm_cowsfromhell

Doing this several times will eventually kill the creature and give you the brain.
