Human Priest (preferably battle priest).
They're good fighters, good protectors (with undead turning and their spells) can wear big armour. You got like kinda a mixture of a nice spellcaster/fighter with those.
I'm using one both in Single-player AND Multi-player games. They really kick ass in MP games.
