You only need to talk to the Oracles once - to get them to open the passageway to the Ishad N'ha area. Obviously, you've done that so it doesn't matter that the Oracles are now "out to lunch".
Do the Dragon Spire last - it really doesn't matter in which order you do the other dungeons although the castle is probably the next easiest area to tackle.
Don't rush off an kill the ratlings you find near a burnt out house if you want to become an Assassin.
