Prowess lets you attack more quickly, and Gallantry lets you hit more often and do more damage. At higher levels, they really do make an impact.
I suggest adding your paltry point to whichever is lower on the skill chart. IOW, the lastest one on the list gets the nod. Why? Because it will be the first one rolled off the list when you have too many skills listed, and this is the only way they can be raised.
After the last one (prowess, IIRC) drops off, put points into the new last one. Save sorcery for last -- it always shows on the list, so you can always add points to it. At least, until you hit level 12 (or 14).
Always put the skill points in the skill that's going to drop off the list next. That's my rule, and I'm sticking to it.
