There are only a few items that are needed in more than one dungeon, the Masque of Evil, the Shroud, Dragon Armor - I think there is a list in the Best Tips thread.

The servant's menu was never needed anywhere. Once you have made use of a map, you don't need it again. The tomes of the elements are needed eventually if you want to become a ZenMaster.

Quest items can be dropped outside the west gate of Ishad N'ha without them disappearing (or so I've been told)
