Fighter/Mage, Fighter/Mage/Thief, Fighter/Thief. These are all finesse classes, though they are multiclasses. I think that the fighter/mage/thief is the best in terms of finesse fighting, little to no armor, the use of blades and he can magically buff himself...just my opinion too.
Bards are good, but they're not really finesse fighters, though they can be in BG2. All my BG1 bards tend to use missile weapons frequently.
