if you can lure them back to the castle area, hide in the moat (near the drawbridge) and peak out once in awhile. You can sometimes see them at certain angles, when you do, blast them with incinerate, or better, and duck back down. I had success doing this, and they don't seem to see you or get closer. Might have been a fluke but worth a try.
