The Merlin's Shield spell makes their poison attack unusable - I have never been poisoned if I cast the spell enough soon. During one encounter, I fought 4 of them simultaneously and lost 0 HP. And I fought - I didn't cast spells.
Therefore, cast Merlin's Shield then decide how to remove the plants from the game. Firestorm or Meteorstorm works great. Good weapons are useful, too.
