These mantraps are pain for all of us. Everyone has his or her tactics for beating them. I would recommend long-distance spells - try Sun or Stone magic (Flamestrike or Meteor will do if you haven't more powerfull spells yet). And begin an attack immediately when you see mantraps, then step back cast again, step back... This worked for me. Hope this can help!
