I think this is in "Best Hints", but I'll reproduce it here:
Paladins -> Warrior, Priest
Samurai -> Warrior, Wizard, Bushi Dojo
Barbarian -> Warrior, Thief
Ranger -> Warrior only
Ninja -> Warrior, Thief, Bushi Dojo
Warlock -> Wizard, Priest
Monk -> Priest, Bushi Dojo
Bard -> Wizard, Thief
Assassin -> Warrior, Thief, Bushi Dojo
Valkyrie -> Warrior, Priest
Zenmaster -> Wizard, Warrior, Priest, Bushi Dojo
That's all the guilds that the different classes can use. The last three are the "elite" ones and have to be offered outside the guilds, so you won't be using those (at least on this playthrough!)
