Well, theives are needed for lockpicking doors and chests, and you may defeat a powerful enemy only to find that you can't get into their treasure. Personally, I add in one or two levels of rogue on to my mage.
That party will probably work, but I have some sugestions.
Firstly, take a cleric, as they can provide ressurection, which will help you out A LOT on your first time through the game.
Secondly, since you want to experiment with many spells, take a normal mage instead of a sorcerer. Sorcerers get to cast more magic, but can learn fewer spells along the way.
Try this party out. I used minimal multiclassing.
1. Aasimir Paladin or fighter4/paladin
2. Half orc Barbarian or fighter4/barbarian
3. Human cleric of lathander or fighter4/cleric
4. Aasimir druid or human fighter4/druid
5. Drow mage or rogue1/mage or rogue1/ranger1/mage
6. Drow sorcerer or tiefling rogue (if rogue levels weren't taken in 5.)
Your tanks should be high on STR and CON, with the paladin also having nice CHA. DEX should be around 12-14, the barbs WIS should be maxed and the paladins should be about 11.
Your priests should have maxed WIS, and good STR, DEX, and CON. A high CHA for the cleric is optional. The cleric should have at least 10 INT.
Your mage should have maxed INT and DEX, reasonable STR and CON, and dumped WIS and CHA.
Your sorcerer should have maxed CHA and DEX, reasonable STR and CON, and dumped INT and WIS.
Use a variety of weaponry. The paladin should use a longsword and shield, the barbarian should use a greataxe, the cleric can use a greatsword, the druid can use a mace, the mage can dual wield daggers, and the sorcerer can use staves (this is only opinion, use whatever weaponry you want),
