There are three buttons to pay attention to for the use of thief skills:

To find traps: This button is found just after the quick weapon buttons and has 4 small triangles on it. While this button is active a thief will be detecting traps. The only action the character can take while detecting raps is movement, anything else turns the ability off.
Thieving: This is the next button - it has a thief's mask on it. Use this button to open locks, disarm traps and pick pockets. Click on the button to activate the skill and then click on the target.
Stealth: This is the next button and has a thief's head on it. Use this to try to hide in shadows and sneak up on opponents to backstab them.
