I've always liked smaller parties. Right now I'm taking through HoW:
Dwarven Fighter
Half-Elf Fighter/Druid
Elven Fighter/Mage/Thief
Gnome Cleric/Illusionist
... though in retrospect, it might have been better to have the Dwarf be a Fighter/Thief and the Elf be a Fighter/Mage.
The lack of a Bard bothers me a little. I really like how the bard songs helped my previous mid-level party (Paladin, Thief->Mage, Bard, Ranger/Cleric). However, having three fighters (out of four) makes up for that loss quite a bit.
Thieves are a lot less necessary in IWD than they were in BG2 (my previous addiction), but with the 3E "Sneak Attack" and "Crippling Strike", they're more fun & realistic. I like Fighter/Thieves.
Gnomes are cool, too. Illusionists are more restricted than they were before HoW, but Clerical spells do a lot to make up for both their lack of Necromancy and Abjuration.
Druids! I love Druids in HoW. A Fighter dualed to Druid would rock so hard. However, unless you have the patience of a saint, it's too hard to roll one, so take a multiclassed F/D instead.
Specialist Magi have really been knocked back a ways in HoW, so if you take one, you'll still need a full normal Mage (or a different specialist) to be able to cast the full range of spells. Conjurers, my old favorite, are now worse than Enchanters. Therefore, take at least two specialists, or at least one regular mage multi-class.
Rangers and Paladins have greatly improved spellcasting, but I still like Fighter/Druids and Ranger/Clerics better, respectively.
