Set traps!! Before you cut off the energy, go to the area where she will appear and lay several traps (Spike Traps works wonders here, although normal traps will also work).
If setting traps to take her out or weaken her is too cheesy for you, then have your tanks Greater Whirlwind her to death after her Stone Skin is removed. Like the others have said, IGNORE the summon creatures, once she is gone to absorb more essence, they will disappear too.
