hmm - lots of questions [img]smile.gif[/img] welcome to the game by the way - we're all insanely jealous that you're getting to play it for the first time
it's up to you of course but try to resist reading too much stuff on here before you play - you're bound to get spoiled - having said that - my reactions / opinions to your questions are as follows
your party is really great - and will be interesting - some of the comments below are in response to you saying you want to maximise their power - circumstances might make that difficult
1) i usually have Minsc swapping between dual-wielding and 2HS depending on the battle - maces are a good option but so are axes, flails (there's a very good flail), longswords - you can have different types of weapon in each hand of course . . .
2) you're thinking along the right lines having your characters complement each other with their weapon choices - the best 2HSword in SoA (arguably) is a paldin only weapon
2a) Keldorn is a Lawful Good paladin - even more than that he's an Inquisitor - read the kit description for Inquisitor
3 & 4) both powerful magic users and the only pure-class examples in the game (i think) - spells is a huge question - for your first run through i'd experiment, read the descriptions, see what you think - much more fun - alternatively you can read the spell reference (link in the forum FAQ although this will contain game and plot
spoilers)
3a & 4a) viconia is an evil cleric - edwin is an evil mage
5) yoshimo is a great choice for your thief - hang on to him - once you get out of the opening dungeon an obvious thief problem/solution will become apparent
combat speed - you can pause (spacebar) and also set the options to auto-pause (on enemy sighted, character injured - etc.) - that's what i do - i never use scripts or the party AI and do all the controlling myself - obviously without pausing that would be impossible) - some people like and use and even modify scripts though - each to their own
not sure about racial enemy - demon maybe? beholders and illithids (mind flayers) are powerful - undead is split into too many categories (for me) and there's good anti-undead equipment - dragons are obviously powerful but rare - there are quite a few trolls in the game - up to you
