Why not just do the normal rules thing then? It saves a lot of time, and it comes out to the same at the end.

HP is not overrated, but neither can it be overestimated either. For example, I would set a Sorcerer with 80 HP against any enemy, while I would hesistate to send a 200 HP Fighter against any enemy. All things being equal, HP gives a small edge. But better protections almost always will be better than a little extra (re: 2-3) HP.
