Demons can't attack you if you're Protected from Evil, so without a valid target, the Pit Fiend will just stay invisible until un-Summoned. What you can do (if you want to fight it but your whole party is Protected) is Summon something, preferably a Mordy's Sword. The Pit Fiend will go after that & become visible.
I think this only happens with Tactics Slightly Tougher Demons, though.
