That kind of thing isn't really worth making a MOD over--just open up GateKeeper and grant yourself an extra memorization slot for each level, and then in the game, don't let yourself learn any more than 5 spells in each spell level. You won't have quite the flexibility a real Sorcerer would have, but it's close enough.

A Monk, though....that would be a real pain, and besides, I don't think the BG1 engine would know what to do with it. With a Barbarian, I would probably just play as a Fighter through BG1 and cheat myself over to the Barbarian class once I hit BG2.
