Another one I was thinking about doing was:

All multiclass party:
PC F/T
Jaheira
Aerie
Jan

Or...

All dualclass party:
PC dual class of choice
Imoen
Nalia
Anomen
ToB NPC dualed over as soon as you get him

Or another one that was mentioned a while back in another thread:

Expendable NPCs:
Any time NPCs die in your party, don't reload. Either pay to get them raised or go recruit a replacement. Good way to try out a bunch of different NPCs.
