The darts will never hit the character, because of his shield of reflection. All the ranged attacks will keep bouncing between the shield and the reflection spell until one of them wears off.

You can do the same thing with the original cloak of cheese and spells like flame arrows. Cast the arrows, and if they get minor spell turned, they'll bounce back and forth between the turning and the cloak until the turning runs out, at which point they will start hitting.

With respect to the paladin, I also would equip them with a bow or crossbow. Since you're pretty much locked into using 2H weapons with them, you might as well have a bow for your ranged attacks. Their Turn Undead ability isn't all that great compared to a cleric's, so I rarely have them stand around using TU. I prefer to have them dishing out damage. I'll use ranged attacks until the enemies close, and then switch to melee, while my archers and mages concentrate on enemy spellcasters.
