Cleric/thieves AFAIK can use all cleric weapons...there are only two weapon types they can backstab with (that both clerics and thieves can use): clubs and quarterstaffs. Don't forget that in ToB, some of these item...problems can be resolved. 
And that does sound disturbingly powergamish...like an assassin/mage.
A party idea:
Assassin/Mage
Assassin/Cleric
Assassin/Fighter
