I once created a PnP dwarven fighter named Dirk that was specialized in the dagger. He was a lot of fun to play.
A straight dwarven fighter with Grand Mastery in dagger is something you don't see everyday. You could do ranged attacks or melee', depending on the dagger(s) you chose...and your dwarven Constitution (along with the fighter hp's) would enable you to withstand a lot of damage.
But that might be more power and less finesse.
If it's style and finesse you crave, how about a halfling thief (LE) for BG1. Then convert him to an assassin for BG2. It would make good roleplaying sense for him to specialize in the dagger (or dart), and when he gets his first HLA, you take the ever-popular Use Any Item and purchase some scrolls of Flesh to Stone.
Or - better yet - have someone craft a Wand of Medusa for you that does the Flesh to Stone without the scrolls.
