BioWare foresaw the Thief drop of Yoshimo to Imoen, and therefore made all of Chapters 4 and 5 very, very light on requiring you to have a good Thief. The drop from Yoshimo to nobody, though, is quite a bit steeper, but you can still pull it off. For Stealth, you've got Valygar. All other Thiefy-type jobs can either be accomplished by other means or simply avoided/postponed.

I definitely do NOT reccommend letting this situation stand for long, though. Get thee a Thief. Even Nalia will do in a pinch, provided she has the right equipment.
