EoD, my recommendation for a first-timer is only to install (in this order):
Patch
Balderdash fixpack
Ease of Use

You should have found all of those in the links others provided on this topic. If you go on to ToB, you might also install Ascension and (maybe) Redemption, but only after completing ToB fully without those mods. The mods themselves will tell you where is best to pick up a saved game in order to then finish with them. I would tell you here, but don't want to spoil and think it's appropriate on the ToB board, not this one. Needless to say, I don't think you should worry about that until you are into ToB.

Then, for future rounds through the game, play with other mods.
