I've got a 39 hunter, and taken leatherworking/skinning all the way. They are by far my favorites for this class, as i can use almost everything i make. At lvl 39, fully half the equipment i'm wearing armor wise is made by myself. I have a warrior with smithing/mining, and mining is far more timeconsuming, and awkward it would seem, as it requires far more in materials and time to gather those materials. I have a paladin with mining/engineering, and that is fun, but not very advanced yet, and with engineering, there isn't much available you can make that you can sell. I've only slightly dabbled with herbs/potions, but that seems relatively easy, and everyone always wants potions. I've heard 2 gathering skills is very profitable if it's just money you're going for. I've got a friend who went skinning/enchanting, which is also good for money making, as you just sell the leather, to buy the enchanting components. it's always up to what you'll have fun doing however.
