If you have trouble with Umber Hulks by themselves, you're not ready for Umber Hulks + Mind Flayers. However, since you've already been through the Windspear Hills, we know that you're capable of fighting.
Mind Flayers: Very high Magic Resistance. Go ahead and use things like Fireball, though, it'll still hurt the Umber Hulks (and your own summons, too-watch out). Their Psionic Blasts will Stun anyone who does not either A) Have high Magic Resistance of their own, B) Have a good Save vs. Spells, or C) Have the forethought to have somebody cast Free Action or Chaotic Commands on them.
Once any creature is Stunned, all of the Mind Flayers who can see it will run over and start melee-attacking it, ignoring all other enemies. This is particularly nasty, as each melee hit from a Mind Flayer will temporarily drain 5 points of Intelligence, and once any creature hits 0 in any stat, that's instant death.
Roger the Fence sells Potions of Invulnerability.
