XP Pro and Home are basically the same under the covers (aside from some networking differences). Home has some ease of use changes, but all that stuff can be shut off and it'll look just like Pro. Just don't try to log into a domain.
There may be some other differences that I didn't run accross... but I doubt anything major.
Either 2000 or XP is a huge upgrade from Millenium (which was the worst OS I've ever seen).
