Im going to re-install Soa, then what should i install over it? The interplay patch, the Baldurdash fix pack? And then wehn i install Tob which patch should i put over that? Any help would be appreciated.

Baldurdash TOB Fixpack
Any mods you want to use.

If your going to be isntalling mods of any description, you should take a copy of yor override directory, dialogue.tlk, baldur.exe and chitin.key . That way if (when) something screws up you can replace all that and get back to the official, patched, version with minimal effort.
