There is one of two things that could have happened.
1) If your intelligence is low, you probably got hit once or twice. Mindflayers drain Int by something like 3(?) a hit. Once you hit zero, you're dead. 2) I think there's someway that they kill you almost instantly. I had a f/m with 19 int who kept getting killed instantly. Try casting chaotic commands to not get held, and draw them out one at a time. A couple of cloudkills or death spells can work wonders too. |
The undead are really useful in going after mindflayers. They have no intelligence to drain so they can pretty much mop up a room of them.

Trivia of the day,
The Cloak of Mirroring does not protect against Psionics, Charm, Confusion and Hold spells. All Mind Flayers use psionics, not magic. Ergo, the CoM is useless against them. |
Chaotic Commands spell plus Greenstone Amulets.
Well, this does not save you from INT draining but it makes you immune to all other unwelcome effects of the Mind Flayers and the Umber Hulks. Therefore, lure few Mind Flayers away, kill them, lure few Mind Flayers away, kill them, and so on. Greenstone Amulets: Summon Mordekainen Swords, pickpocket them (beware! you must be successful or else...), let the swords expire, summon Mordekainen Swords, ... One more note. The amulets you gain this way are already active and they will be active until the hell freezes - or until somebody dispels your protection (Mind Flayers cannot dispel it, Beholders can). Don't activate them, just equip them. |
Hasted skeleton warriors with defensive harmony(they last longer against umberhulks) have worked wonders for me against mind flayers.

Bug Report,
If you have the Baldurdash Fixpack, it fixes the bug that enables you to pickpocket Mordenkainen's Swords for their Amulet. Besides, why not just send in the Mordenkainen's Swords instead to slice and dice some calamari for you? Skeleton Warriors and Mordenkainen's Swords excel against Mind Flayers, because as one member once chanted, "They got no brains, they got no brains." |
Also, I found that switching your front line fighter during your fights with them and using a slew of missile weapons helps enormously...
