If two laptops need to access a desktop computer to stream things like music for example, can this be achieved simply by purchasing wireless network cards and operating in ad hoc mode? (ie without having to buy a router or access point)

Yes. You don't need anything, just hook them up, set the network and you're good to go.

yup, it's basically the same as running a crossover cable between the ethernet ports, not a whole lot to it and it will function as long as you don't need outside resources.
