I am looking to try a new recipe tonight.

I have skinless chicken, thighs and drumsticks

I have bottled BBQ sauce and other spices as needed.

This will be an oven-roasted method.

Please share your best recipes so I can make a good one tonight.

Well adding a little liquid smoke to the BBQ sauce is always nice. And oven method is all right but to get that nice smokey flavor I would finish it off on the BBQ. And you take the skins OFF. I always leave them on then people have the option to take it off afterwards. The reason I do that is because the fat will give some flavor to the meat.

Let me look through a few books I have. Since you are using Bottled BBQ sauce you are limited on what you can really do. It depends on the type of BBQ sauce you have. You can always infuse a few different flavors in there. Hint of cummin or little more honey for the sweetness garlic of coarse. And to get fancy when BBQ to finish off you could use Misquite(sp) chips. Just make sure you soak them in water first or you just get a big fire.

Too easy. Just spoon out some salt, pepper, cayenne, italian herb, rosemary, and just a dab of dry mustard. Mix it up good, and rub it all over the chicken.

Skin is the chef's choice. However, it does add taste, it also adds fat count to the finished product. If grilling, I start with the skin cut into strips, and completely remove it on the last rotation. But in the oven, I always pull the skin off.

I think one on the best chicken recipes I have found is as Follows.

1/4 cup chopped garlic, 1/4 cup chopped ginger, 2 cups soy sauce, 1/4 cup honey. A little hot sauce is nice as well for a little Kick Marinate for a couple of hours.

add a little light olive oil 1/4 cup or some nice bacon grease to roasting pan. Place the chicken pieces in the roasting pan in your 450 deg oven. Let it brown on both sides the add the marinade drop temp to 350 and let cook until very tender and the marinade is reduced by at least half.

This is a luscious recipe. It is likly to late for tonight however you may enjoy it some time.

Bon Appatite
