When I was in the Umar Hills I got the symbol and tome of Amaunator... do I need them for something?

I think these are for the Temple Ruins quest, but im not sure on the tome. If in doubt, keep it.

The symbol opens the way to the shadow dragon. As far as the book is concerned, I've never needed it for anything in the whole game.
