If i have my apperenti create an artifact, will it be a gurantee that on of them dies....and if it is, are any of the artifacts worth losing one or two of them?

No, most of the stuff sucks. However, the wand of the apprentice is cool, that is the only one I think you should sacrifice a person for. If you choose the first ones, (not the "powerful" ones) like the knife, your people will not die.
