You know in shadow keeper at the global thing at the end it says add, well are you able to put in for example... MAZZYROMANCEACTIVE 2.... so that you could romance anyone?

No.
There is no script for romances other than the normal ones and/or the add ons.
Messing with that variable will not allow you to romance anyone and might just have negative effects on the game.
