The skulls are part of a quest and you only need 1.

I beleive you can only get the skulls around High Hedge. Well, on a map (I think its to the Sth Wst of High Hedge) you'll bump into Melicamp the Chicken. When you take him back to High a skull is involved in polymorphing him back to his regular self.
As all the skeletons round High Hedge come with skulls (so to speak) you can easily go and just pick up the one when you need it.

Fear? I know not the meaning of the word. And you can keep that dictionary away from me!

Just dump em all, wenn you get the quest its gonna be real easy to obtain a skull.

There is a spell called Skull Trap. It requires a skull. After it goes off, you can pick the skull back up and reuse it. If you intend to use this spell, then you might want to keep a couple of skulls.

I thought casting Skull Trap created its own 'skull'?..at least it did in BGII

Personally I like to keep them as souvenirs.

In BGI Skull trap makes it's own skulls and you can't "pick the skull back up"
