For all you sauce heads out there, what is your favorite sauce, and why?

also, if you send your favorite sauce to me, ill sample them and tell you which is the all time BEST!!! :D

Personally, I'm quite partial to bolognaise sauce, but obviously only with spaghetti/pasta type dishes.

There's a kebab shop round the corner that does a truly awesome garlic sauce.

Sweet sauce, would have to be chocolate.... mmmmm, now that's got me thinking about that whole chocolate/sex poll thing again....
