I think one of Minsc's funniest moments ever was in TOB:

Minsc has a personal conversation with Aerie, where she more than readily agrees to have the conversation. (Methinks Aerie has a small crush on Minsc.) Minsc tells about the personal duties of the Witch. Aerie asks why he did not tell her of this earlier. Minsc replies that he had forgotten. Then he goes on to say that he and Boo were rolling in some weird types of leaves, and that he needs some 'special salve' in an area that had just became too itchy. Aerie asked him what kind of area, then she shutup real quick realizing where, and said she'd see what she could do about it. Minsc goes on to say that he can't wait until he an Boo could dispense Butt-Kicking justice instead of feeling butt itching...

The hamster debate with that guy from Calimshan at Waukeens Promenade is pretty good, too. Can't recall it exactly, though.
