Guys, my wife is from Chile! Today and tomorrow there will be traditional celebrations marking there independence of 1810. 4 potatos (medium) , one onion, salt, oil, and fresh parsley.
Cut onions into strips the long grain
Put salt on them and let them sit for five minutes-rinse under cold water sqishing them three times and fully drain water
boil potatos let them cool and then cut into medium pieces
wash and cut heavy pinch of fresh parsley
oil and salt as desired
