Not bad at all... not up to current State of the Art PC game standards but better than most games I've seen that are out today. Sadly, releasing for the X-Box will limit graphics quality pretty severely (unless their engine scales well when you put it on a fast system).
You want to see awesome graphics quality in a game that's out today (I just finished it) check these out:

I've got a GeforceFX 9700 Ultra (liquid cooled and overclocked to 501/1040 or thereabouts) and it's getting stressed pretty hard trying to play Far Cry at Very High quality settings and 1024x768 res. This is just a taste of what's to come with Doom3 and Half Life 2.
I can only hope that ARPG's start to take advantage of the high end FPS engines that are coming out for the PC. There are some regions in Far Cry that are satisfyingly large, not quite big enough for RPG play but perhaps a well designed ARPG.
Fable has some very cool gameplay features that make me want to give it a try, the fact that your character appearance changes is unique. I'll definitely give it a try when it comes out for the PC.
