I've been fooling around with creating enchanted items (or having the guild enchanters do it since that's what they get paid for), and the highest enchantment point value for any given item seems to be 60.
(usually extravagant rings and pendants.)
Are there any items out there that have a higher value, or is that the max?

Yes, there is ;)

Exquisite rings, amulet and garments (shirt, skirt and etc) has higher enchantment capacity than extravagant ones. However, they are quite rare and more expensive.

Deadric and Ebony Tower Shields also have very high enchantment capacity.

Go for the 'exquisite' stuff, they have the most capacity. For armor I know glass doesn't really have great enhantment value. Tower Shields generally have great capacity and are the best choice for enchanting.

I believe that there is no item in the game that is capable of holding the cure blight disease spell.

the daedric tower shield has the most enchanting points, 225 IIRC. ebony tower shield and regular daedric shield have 150 i think and exquisit jewelry has 120.
as for weapons, the ebony staff has 90, the rest have around 20 max.

I found enchanting to be a bit of a let down, after going through all the trouble of capturing some really powerful creatures, including a golden saint in an azura's star (I cheated and got gem from console!) there wasn't anything good to use it for. The "price" for constant effect enchantments is just too grat for any item to take especially the more useful spells.

True. But I think its required to balance the almost insanely-powerful benefits of constant effect items. For experimental purposes, I once enchanted an exquisite amulet with a constant effect of restoring health by 4 points (using the soul of a Golden Saint) and it cost me a whopping 90K (I cheated to get the money since it was an experiment). Wow, that Amulet made me near unkillable. With my health regenerating at 4 points per second, at Sadrith Mora I was jumping off the towers of Wolverine Hall without fear and slaughtering everything in sight. I was attacked by guards left and right but my health never even fell below 90% the whole time.

I was luckly to pick "Enchant" as my major skill. I found the secret master trainer and trained my enchant skill to 100 and my Intelligent is also at 100.

I DIY all my enchanting and now I have a lot of left over Grand soul gem (Golden Saint) and Azure's Star but I have no more stuff to enchant (practically all my garments and armors have already been enchanted).
