I have never had much luck stealing from shops. what stats are used to see if you can steal and yes I do use a thief when I do it. Also is thier certain shops that are easier to steal from?

Always atleast 1% failure rate. I have 250% on stealing. But then agian I'm level 29. Use potions!!! Great Gold generater. Sell, Steal repeat.
Save and reload a lot if you're not good.

Only lots of shops wont accept 'fenced' goods so you have to find someone who doesn't care-thieves guild anyone?

Yeah, Roger the Fence, Black Market Thief in Thieves Guild etc.

Stealing from shops utilizes the pickpocket skill, and yes, some shops are easier to steal from than others.

Bernard at the Copper Coronet, for example, is very difficult to steal from while I've heard that Gorch at Mae'Var's guildhall is very easy.
