also when i continue lvling will the appropriate additions to my characterss attributes/stats/spells still occur?

yup
although you won't get the high level ability's that ToB gives
And your druid won't get elemantal immunity
you can use the cap remover, I did that too and it turned out fine for me
But it might be better to use ToB as you get extra ability's too

In BG2 he is able to get level 9 spells
unless you either install the cap remover which will allow you to get to any class
or you install the add-on Throne of Bhall which will raise the cap to 8000000
