I plan on sending Keldorn back to his family which will leave me with five characters, myself (a cavalier), Minsc, Jahiera, Aerie and Yoshi. I wanna know who's the best NPC to pick up.

If you want an Archer, get Mazzy.

If you want a tank, get Anomen, who can cast darn good clerical spells too.

If you want a mage, either wait for Imoen or get Nalia.

You seem to have all aspects for a good party there already, what you could do is go round picking up each of the npc's and doing there quests. Having five main slots and a continually swopping sixth one is the way i play the game

Edwin is the best to Get becoz you lack a Good not multiclassed Mage
BUT he is evil and i can see if you won't want him
Otherwise i would Say get Jan so yoshi can focus on one set of thief abilities and Jan of another set
comes inhandy with pickpocketing and trapsetting and stuff

Buck the trend and dont have a 6th npc, that way you get more xp and level up quicker

Add a mage (Nalia is probably the best for now; add Imoen later both for mage and for plot). You might want to dump Yoshi for Jan as well.
