In the asylum dungeon ive picked up some paintings of monsters and stuff, and also some mithrel tokens or something? Any use for them?

The monster paintings need to be used, if i remember right..

The paintings are used to enter certain doors in a large room containing some yuan-ti.

The mithril tokens can be used in a (vending) machine that is found in a room leading on from these doors. The more you collect, the better the item that you can get from it.

dont forget the Chapel Key in the windspear hills. i never found a use for that...

Actually there is NO use for the Chapel Key, the key that you have in mind is the Sewer Key from Tazok in Windspear Hill Dungeon.
