In case I want to steal from a merchant....Do I have to use the thief as the dealer with the merchant...or can I steal from him even though my fighter is the one talking to the merchant.

You can steel from him even though your fighter is talking to him. Just select your thieves portrait.

I think you can pickpocket with your fighter, but your chances of success are always better with a thief.
