1) it takes time, some time a rival mage of Edwin will appear and the quest continues, usually takes a couple of weeks after Edwin "changed"

2) You will need to go to Umar Hills (after you have picked up the note in the trapped closet. There should be 4 merchants instead of 3, go up to the one that looks like a human fighter and buy the book "History of Zhentarim" (spelling?) and tell him that his name is Darcin Cole. Quest continues on as you will now need blood of a silver dragon.

If you kill the Red Wizard before he changes Edwin back to a man, he will stay a women. But, he will also stay with you regradless of your reputation. Even if he(she) says she's leaving, she'll still stay. Neat trick for good parties.
